hearty potato & kale soup

I know what you're thinking.
And yes, it's true.
I do sometimes actually make healthy foods.
;)

 (That purple stuff is actually potatoes, not mushrooms, fyi all my fellow mushroom-haters out there)

I was such a pain about making this recipe. I actually wanted to make it Monday or Tuesday night.
But one bad experience with kale in this family led to protesting from the members.
"Not everyone in this family likes kale, Carly!"
What is kale? It's like spinach, but with a much more bitter bite to it. It's also this leafy vegetable that is absolutely loaded with good stuff for you, including a few things you can't really get from anywhere else.
Kale is good stuff, guys, I promise! You just have to know what to do with it and what spices to mix in.
And lemme tell you, this soup? Can't even taste the kale. It has the goodness of sauted onions, carrots, chicken broth, potatoes, and diced chicken to make it oh so delicious.

Potato & Kale Soup
Ingredients
2 tsp olive oil
1 medium white onion, finely chopped
2 cloves of garlic, pressed or finely chopped
1 cup diced carrots
1 pound yellow, white, or purple potatoes (can you tell we used purple?)
4 cups chicken broth (bouillon cubes work fine too)
2 cups water
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp lemon pepper
Sprinkle of salt and pepper
3 cups chopped kale
1 1/2 cups chopped chicken breast
A tiny bit of Parmesan cheese for sprinkling on top

Directions
Heat oil in large pot over medium heat.

Saute onions until softened and brown, about 5 minutes.

Stir in garlic, carrots, and potatoes and cook for another 5-10 minutes, or until potatoes and carrots have softened up a little bit. Add your broth, water, and herbs. Add salt and pepper. Bring mixture to a boil, then reduce heat, cover and simmer for 10 minutes, until potatoes are almost tender.

Stir in kale and chicken and simmer for another 10-20 minutes, until chicken is full cooked and potatoes are tender. Sprinkle with Parmesan cheese for an extra touch of yummy.
